The Vineyards The management of vineyards requires special attention as the origin of good wine quality lies in the vineyards. In harmony with nature, the company practices integrated viticulture. In order to counteract the undesirable side effects of a monoculture, we sow our vineyards with special seeds and organically fertilize them through the introduction of controlled compost. We operate a balanced yield regulation which starts with the first cut of the vines and the vintage dependent green harvesting or grape division which is required after the flowering. The high-quality varieties of grapes are harvested solely by hand as only high-quality grapes serve as a basis for good wines. Only healthy and ripe grapes can be processed into elegant wines with great, aromatic complexity. The Wine Cellar After the harvest, special care is provided through a gentle and quality preserving processing. Attrition, as well as the oxidation of the harvested grapes, is avoided during the remaining working processes. Due to latest technology, the fermentation of the grape must takes place in thermo-regulated, stainless steel wine casks. As we work with small containers, every batch can be individually accompanied during the fermentation process and the wine’s aromatic complexity can be increased. The red wines mature for at least 10 months in the so-called “Barriques” (oak barrels) before they are bottled. The Wines We are keen to produce wines with a lot of freshness und aromatic complexity. But what is especially important is that the wines are balanced and have a harmonious taste. The connoisseur has to recognise the terroir (minerals) and at the same time, he should grasp the grape variety’s typical aroma (fruit).

Ehnen is home to around twenty active winegrowers, some of whom work as independent producers. Among them is the Domaine Viticole Häremillen. Founded in 1988 by the Mannes-Kieffer family, it was initially based in the old mill in Ehnen, from which the estate takes its name. It is an old watermill where flour was produced for the entire region. The name originally comes from Trier and is thought to be derived from ‘Domherrenmühle’ (Canons’ Mill), which belonged to the Trier Cathedral Chapter until the French Revolution. It is rather rare for an estate not to bear the name of the owner’s family. In this case, the aim was to honour the cultural heritage In 1996, a new, modern and functional winery was built, just a few hundred metres from the mill. The new building is equipped with state-of-the-art winemaking facilities, including stainless-steel vats fitted with a cooling system to regulate the temperature during fermentation and preserve the natural aromas of the individual grape varieties as effectively as possible. The large vaulted cellar of the former mill, with its natural stone floor, houses the oak barrels, which are used in particular for the Pinot Noir aged as a red wine. The mill building itself has been completely renovated, and tastings have been held here since 2005. The only remnant of the past is the former waterwheel mechanism. Tasting at our winery The combination of respect for tradition and the natural elements with progressive methods is characteristic of our work in the vineyards and in winemaking – and this is also reflected in our winery. The tastings take place in the mill, a former property of the Trier Cathedral Chapter, also known as the ‘Domherrenmühle’, in front of the restored mill mechanism, with the cellar featuring wooden barrels and a natural stone floor in the courtyard. The waterwheel has been impressively restored, and the large roof areas have been fitted with solar panels, which are used to generate renewable energy. Just a few steps away is the winery with its modern equipment, temperature-controlled stainless-steel tanks, and the production and bottling facilities for our sparkling wine. Here you have the opportunity to taste a particular wine and collect your orders.
